Healthy banana and apple cake


This is my simple version of this amazing recipe.


Healthy banana and apple cake

Ingredients:
. 2 eggs (remember: happy chickens!)
. 1/2 cup brown sugar (or honey)
. 3/4 cup unsweetened apple puree (cooked apple with some drops of lemon)
. 1 + 1/2 cup oat flour
. 1/2 teaspoon salt
. 3/4 teaspoon baking soda
. 1 teaspoon baking powder
. 1/4 teaspoon cinnamon
. 1 + 1/2 cups mashed ripe bananas
Optional:
. Dried blueberries
. Cashews
. Almonds
Topping:
. Quark yogurt
. Soy yogurt (red fruits)

Preheat the oven to 180º C.
Blend sugar with eggs until smooth.
Mix all the other ingredients.
Add dried blueberries, cashews and almonds and blend carefully.
Bake for about 30/40 minutes.
When cold, spread the mix of yogurts on top.
Enjoy!
